One of the most fun parts of this journey is sharing dinner with our friends. During the week of July 4th, we were hit by an unbelievable storm. Thousands lost power for several days during the heat of summer. Our friends the Colwins were some of those that lost power. We welcomed them into our home for a couple of nights. They are friends that have become family and are some of the few close enough to us that I didn’t have to clean my house before their arrival. The one condition was that they were subject to this crazy eating adventure.
The first night we dined on an amazing white pizza. This White Pizza Recipe was yet another Pinterest find. I used my favorite pizza dough for this recipe. It baked up beautifully and had a perfectly crisp crust. The combination of cheeses was unique and was just perfect. This was so easy that I made it again the following week. I’d recommend this recipe for an easy weeknight dinner or a way to spice up your family’s weekly pizza night. If you are a fan of white pizza then this recipe is one that you must try!
The following night we dined on quesadillas. I found this barbeque chicken and grilled pineapple quesadillas recipe from Pioneer Woman. I know, if it’s not a recipe from Pinterest, it’s a recipe from Pioneer Woman. Like I’ve said before. The woman can cook! I’ve still yet to have one of her recipes that I don’t like. The grilled pineapple was so good that I can’t believe some of it made it to the quesadillas. I devoured more than my share in the cooking process. I really enjoyed this dinner and the company we enjoyed it with!
