Do you ever make kitchen purchases that you regret? Whether an underused appliance or an over priced rare ingredient, I’ve had my fair share of kitchen flops. Most notably was my quest for a waffle iron. I love waffles and feel that they are incredibly versatile treat. We’d been talking about buying one so instead of taking some time to shop around and read reviews, I bought one on impulse. It was the cheapest at Target by at least $20 but the thought of spending $50+ on a waffle iron was more than I could take. I made one batch and knew I should have spent the extra money to get a higher quality product. I basically made pancakes, in the shape of a waffle. They were soft and flavorless. Ever since, I’ve been on the quest to find a new one that would make beautiful, crisp waffles.
Still unwilling to spend much money, I began watching Groupon goods. If you are in the market for any small appliances I’d recommend checking out Groupon regularly. They’ve had lots of great name brand small kitchen appliances at great prices. While we were in Texas for Thanksgiving, a waffle iron was featured on Groupon goods. It was marked down to 1/3 the price and got favorable reviews. Merry Christmas to me!!! My level of excitement over this new appliance was comparable to a kid at Christmas.
Since I was so thrilled about this purchase, it would be logical to assume that I toiled over fading the perfect batter recipe. Truth be told, I’m a Bisquick girl. I find a basic batter is the perfect canvas for a variety of fun flavors.
I prefer a chocolate chip, peanut butter and banana waffle. Yes, I know that it seems like a weird combination but it is so delicious. I make a waffle then sprinkle with 1/8 cup chocolate chips, drizzle with 1/4 cup melted peanut butter and 1/2 banana, sliced. Currey prefers a healthier version. To make his I put 1/2 the batter in the iron then add 1/4 cup granola. Top with the second 1/2 of batter. Once the waffle is cooked, sprinkle with additional granola, 1/2 cup yogurt and sliced fruit. He typically likes plain yogurt and strawberries but on this morning we just had strawberry yogurt.
If you are looking for a fun breakfast choice for your kids, this is a great option. Use whatever ingredients you have on had to make a waffle bar. Baking chips, sprinkles, granola, yogurt, fruit and marshmallows are a great place to start. You can use peanut butter, syrup or chocolate sauce as well. Let your kids have fun and be creative!
