The first time I was exposed to chilled fruit soups was while on a cruise with my family. Almost every night there was a different chilled fruit soup on the menu. That was our first and only cruise but it was a very memorable vacation! I am still teased by my family about a huge emotional meltdown I had on my 21st birthday while we were at Margaritaville in Keywest. If you know my brother you should ask him to tell you the story. All stories are funnier when my brother tells them. But I digress…
When I stumbled upon this Strawberry Soup recipe I knew I had to try it. Any fruit that’s in season can be substituted in this recipe. This soup is delicious and it would be the perfect cool treat on a hot summer day.
Strawberry Soup
- 1 ½ cup Fresh Strawberries
- ¾ cup orange juice
- 1/8 cup honey
- ¼ cup sour cream
- Whipped cream & sliced strawberries for garnish
Blend strawberries, orange juice, honey and sour cream until smooth. Pour into a bowl, cover and refrigerate to chill.
To serve, pour into bowls and garnish with strawberries and whipped cream.
Although this soup is fantastic, it was not filling enough on it’s own. I served it with a ham and swiss Panini which was a great compliment to the soup. This would also be a great addition to a brunch or bridal shower menu.
