At my core, I love chicken fried steak. Love it! So much so that it inspired the name for my blog. It’s a southern staple and I’ve had it at more places than I can count. Whenever we are in Amarillo, we even go to a breakfast place with my in-laws where I get chicken fried steak for breakfast. I realize it sounds insane because it’s not your typical breakfast food, but it is delicious!
When I saw this recipe for Steak Fingers from Pioneer Woman, it quickly moved to the top of my menu-planning list. These were so good that I’ve made them twice in the last 2 weeks. There have been few recipes that I’ve made on this journey that I make again simply because I’ve got a lot of cooking to do. Repeats leave less room for new recipes. I’m convinced I’ll be making these every 2 weeks until I burn Currey out on them or the weight we’ve gained from eating them regularly makes none of my jeans fit.
There are a few things that make these so delicious. First, she seasons her flour. I’ve never done this before but I’ll always do it from now on. The subtle spices add a depth of flavor that’s incredible. Secondly, they are “double dipped”. I am a fan of the flour dredge, egg bath and another flour dredge.
It makes for a wonderful crust. Finally, I think the real difference is that because they are smaller than an entire steak, more of the crust stays intact. They aren’t in the grease as long and I think that the crust stands up better.
To really appreciate these steak fingers though you must make the gravy. Even if you think you don’t like gravy, you must try this. We had these for the second time last night and we decided it was the best gravy I’d ever made. As crazy as it sounds, that’s a big deal at our house.
Gravy hasn’t always been something I could make. I’ve watched my grandpa and my dad make it countless times. I’ve even had lessons from my dad but I could not master gravy. There may have been tears shed in my kitchen on multiple occasions when I botched gravy. Then, one Christmas morning, I did it. There was much celebration in our house and Currey declared it the best Christmas gift he’d ever gotten. I think this gravy is so good because you use canola oil and butter. The combo of the two is so much better than either option alone.
Serve these steak fingers with a side of mashed potatoes and enjoy a delicious Southern dinner in the comfort of your own home. I’d love to know, what’s your favorite food to cook in your kitchen?

I’ve never had steak fingers but this sounds really good! Did you use cube steak or where can you find finger steak?

Jeanne- Yes, I just use cube steak. I’ve never seen finger steaks either. You should give steak fingers a try! They are one of my favorites.
