Occasionally, I’ll see a recipe on another blog or on Pinterest and it’s all I can think about until I make it. While I realize this is not normal behavior it’s how my mind works. What can I say? I’m quirky! When I saw this recipe for steak and potato hash at Simply Scratch I knew it was one of those recipes. I think my mouth was drooling as I looked at pictures and read the directions. I needed to make this immediately! While my tastes have developed and changed over the years, I’m a meat and potatoes girl at heart. I’ve always been. My dad always referred to me as a carnivore because I regularly refused to eat green vegetables. A well cooked steak, paired with a baked potato, is my idea of a perfect meal. Currey has steaks perfected and I’d always prefer one he cooks to anything I could get at a restaurant. Steaks at home are my favorite “splurge” meal and I consider it a treat every time. I realized that we would never have leftover steak for this recipe because leftover steak never happens at our house. Instead, I simply purchased some inexpensive steaks and cooked them for this dish. Worth every penny!
I’ve talked repeatedly about my love of breakfast for dinner. I think this meal might be a little rich for breakfast, but would be an amazing dish for brunch. Or enjoy it for dinner like we did. Both my kids inhaled this meal. We like eggs with runny middles but you could cook your eggs to whatever level of doneness you prefer. Top with your favorite hot sauce to add a little kick.
