I don’t know about you but I feel like everyone is gearing up for fall. Most of the blogs that I follow are sharing fall recipes, talking about fall fashion or sharing pictures from school starting and football games. Let me be the first to tell you, I’m in denial that fall is coming. Complete and utter denial. Honestly, I used to love fall; the colors, the flavors, the cooler weather. And then I moved to Illinois. Don’t get me wrong, I love our life here but there is really nothing like our winters. People assure you that you’ll eventually get used to it but this will be my 9th winter and I can guarantee you, I’m not getting used to it.
In an effort to keep the summer alive, I’ve made two festive summer drinks. The first is a copycat of Sonic’s Cherry Limeade that I found at Lauren’s Latest. I love Sonic and in my opinion, the best thing about Sonic is Happy Hour. If you aren’t familiar with Sonic, every day from 2-5 all of their fountain drinks are half price. After Blythe was born I went every afternoon to get a lime Dr. Pepper. Well, every afternoon until the teenage cashier handed me my drink and said, with a smile, “I’ll see you tomorrow.” At that point, I was horrified and decided to move to a once a week Dr. Pepper from Sonic.
Sonic’s Cherry Limeade is a great kid friendly drink option that’s fun to use when entertaining. This recipe is really easy and makes kids feel special especially if an adult only drink is being served. This would be easy to double or triple and would be perfect for a backyard barbeque or a family picnic.
The second drink is a Frozen Raspberry Mojito. I modified this recipe for Frozen Strawberry Mojitos that I found on pinterest. I used raspberries because that’s what I had on hand. I would use about 8 sprigs of mint and I muddled that with 2 limes that I’d quartered. I removed the lime and then put the mint and lime juice/pulp into the blender with the other ingredients. We also added ice to our mix to get a slushy consistency. If you don’t like tart drinks and you use raspberries, you might want to add simple syrup, agave or honey to taste. Currey added a ¼ cup of Sprite to his and it was delicious!
