Still looking for a Christmas morning breakfast dish? I’ve got another recommendation. My mom has been making this sock it to me cake for as long as I can remember. Any time someone needed a meal, this was the cake that accompanied whatever dinner my mother deliviered. We gave my mom endless grief because although she made these cakes often, our family was rarely the recipiant. If we came home from school and a sock it to me cake was in the oven, we knew that my mom was delivering dinner to someone.
We did get to enjoy a cake of our own every time we went on a ski trip. We’d take cake and sausage balls for breakfast on our way to the ski slopes and stash a couple of extra pieces in the car for the trip back down the mountain. On one trip, our car slide off the road so while my dad went to get help my brother and I devoured half of a cake oursleves! This cake is clearly delsicious. Sock it to me cake is one of my favorite comfort foods and it’s always been one of our family favorites!
Sock it to me cake starts with a box cake mix but tastes anything but ordinary. The addition of sour cream keep the cake from being dry. This cake is perfectly sweet without being overly indulgent. It’s excellent for dessert and is also enjoyable with a cup of coffe for breakfast.
ingredients
1 box Butter Recipe cake mix
3/4 c vegetable oil
1/2 c sugar
1 t. vanilla
4 eggs
1 c sour cream
2 Tbsp brown sugar
2 tsp cinnamon
instructions
- Combine cake mix, oil, sugar, vanilla, eggs and sour cream in a large bowl. Stir until all ingredients are incorperated.
- Pour 1/2 of the batter into a greased and floured Bundt pan.
- Combine the brown sugar and cinnamon in a small bowl. Sprinkle over the cake batter in the Bundt pan. Top with remaining batter.
- Bake at 325 for 1 hour or until golden and toothpick inserted into the middle of the cake comes out clean.
