For Bennett’s birthday, I wanted lots of sweets. While I’ve yet to make a Pioneer Woman recipe that we didn’t love, I knew that sweet treats would be what people remembered. I saw an adorable picture on Pinterest for s’mores sticks and I was immediately reminded of a campfire. I’ve never made anything like this before so it was immediately added to our menu.
These s’mores sticks were so easy to make. I used Wilton chocolate melts, which are my new go to chocolate for desserts. They melt flawlessly. Initially, I didn’t finely crush the graham crackers. The small pieces didn’t stick well to the chocolate so I had to crush them again. Finely crushed graham crackers worked much better.
We also enjoyed sugar cookies in the shape of Texas, hats and boots. I thought they were a fitting touch. I love this recipe for sugar cookies and have made it several times now. They are soft, chewy and perfect topped with cream cheese icing. While I usually like homemade icing, for this occasion, I used store bought icing. It did the trick and saved me some time in the kitchen.
S’mores Sticks
25+ lollipop sticks
1 bag marshmallows
1 bag Wilton disks or other chocolate to melt
4-6 graham crackers, finely crushed
Arrange marshmallows on a plate then put a lollipop stick through each marshmallow.
Melt the chocolate in the microwave according to packaging directions. Dip marshmallows in melted chocolate, covering about ¾ of the marshmallows.
Quickly roll the marshmallows in graham cracker crumbs. Return to plate for chocolate to set. Enjoy!
