While Currey and I were on our August vacation we enjoyed a night with our friends Ryan and Kristine. Kristine made a feast for our dinner together. It was extra special as she made guacamole the way I had showed her 4 years ago. I was excited that she likes it as much as I do. I was reminded of dinners that we all enjoyed together when they lived in Illinois and the time we spent in our kitchen cooking together.
Kristine made a taco bar and I was so inspired that I copied her idea when we had company a couple of weeks ago. It’s a great way to feed a crowd. For our dinner, I made Chicken Ropa Vieja from Skinny Taste. Basically, it’s just shredded chicken tacos with onions and peppers. We were serving several kids so I didn’t add much spice to this. If I made this again, I would add jalapeno or something else to add more heat.
I also made Cilantro Lime Rice. This is seriously just like Chipotle’s. If you love their rice you must try this. It’s a great addition to any tex-mex dinner that you make.
We served this with black beans, corn tortillas, four tortillas, chips salsa and guacamole. Add your favorite taco toppings and it’s quite a feast! This is a great meal for entertaining. You could easily add your favorite taco fillings and side dishes to make this fit your tastes. It’s easy to personalize and easy to make for a crowd.
