If you’ve followed the blog long, you know I’m a fan of all things homemade but sometimes I just need a quick and easy treat. We needed a simple dessert for our small group a couple of weeks ago and my sweet husband reminded of an old favorite, chocolate chip sandwich cookies. These cookies came about from a tradition my friend Andrea and I started. We lived in the same apartment complex as she and her husband and we watched movies together at least once a week. We would take turns hosting and in our 2 years of living near each other we devoured dozens of break and bake cookies. One night, I brought over a tub of icing and these amazing treats were born.
You’ve probably seen dozens of decadent recipes for sandwich cookies, especially if you follow food blogs or spend much time on Pinterest. I adore sandwich cookies because there are hundred’s of combinations of flavors. It’s also a dessert that’s portable and easy to eat. An all around winner in my book! While I like these homemade as well, they can easily be made with break and bake cookies and store bought frosting. For this version we used chocolate chip cookies with chocolate frosting but I’m also a big fan of sugar cookies with cream cheese icing as well. I also love the cookies with peanut butter cups sandwiches with peanut butter frosting.
Simply bake however many pairs of cookies that you need. I always bake cookies 2 minutes less than the directions say so that they stay soft and chewy. If you are looking for a cookie to impress your friends then you should give this one a try!

My roommate and I used to eat cookie dough right off the roll with spoons! Oh college memories….
And I always underbake my cookies too. It’s the only way to go!
