My Baking Addiction was one of the first food blogs that I ever stumbled upon and it has changed the way that I look at dessert. Jamie comes up with 100’s of recipes for sweets (and other food too!) and slowly but surely I’m making my way through them. I can guarantee that you will see several more recipes linked from her site. I’ve made a number of her recipes since finding her blog and I’ve never been disappointed. She has great photography and I love the style in which she writes. Her recipes are organized incredibly well. Visiting her site is worth your time but prepared to find a long list of new recipes to try! I’ve found several wonderful recipes on her site and these Rolo Stuffed Chocolate Chip Cookies are no exception.
Our sweet neighbors gave us a playhouse that their granddaughter had outgrown. Blythe has loved spending time outside in her house so we decided to make cookies to show our appreciation. I made these cookies over 3 days because, let’s be honest, sometimes life doesn’t allow for a whole afternoon of baking! I’m so thankful that I did because I realized that the first batch was too big and that the cookies needed to be smaller so that your first bite got some of the Rolo. These cookies were delicious straight out of the oven but they stayed soft and chewy even after they cooled. In my mind that makes a perfect cookie!
