If you read many food blogs, you know that each blogger has a story as to why they started cooking and blogging. For some, its years spent in the kitchen with their mother or grandmother that fostered an early love of cooking. Or maybe it was allergy that required a diet shift or a weight loss journey that prompted a lifestyle change so they created a blog to document their journey.
One of the reasons that I started cooking is because I love hearing people’s stories. I loved having people around our table and learning more about them and their story as we enjoyed a meal together. In addition to recipes, I read blogs because of the writer’s stories. Each of us is unique and has a story to share and I realized that writing this blog would give me a chance to share stories from around our table.
Another reason that I began cooking is that I’m actually a picky eater. I’m sure that publicly admitting that breaks a cardinal rule of food blogging but it’s true. I’ve expanded my culinary horizons greatly since Currey and I got married but there are still lots of things I refuse to eat!
The strange thing was that with as picky as I was, I’ve always loved spinach, broccoli and asparagus. Simply steamed or sautéed with butter, salt and pepper I could eat these veggies forever. I’d never considered that I’d love Brussels sprouts just as much but indeed it’s true.
Roasted Brussels sprouts have been a side dish staple at our house this winter. I debated posting this recipe because it’s so simple but the end result is so delicious the recipe is just too good not to share!
ingredients
1 lb Brussels Sprouts
2-3 Tbsp Olive Oil
Salt and Pepper to taste
instructions
- Preheat oven to 400.
- Prep the Brussels sprouts by cutting off the bottom stem then quartering each sprout.
- Place the Brussels sprouts in a 9x13 dish then drizzle with olive oil. Generously season with salt and pepper. Toss to coat.
- Roast for 30 minutes, tossing the Brussels sprouts every 10 minutes for even cooking.
- Remove from heat and serve. Can be enjoyed hot or at room temperature.
