You may have noticed that I was MIA last week. Currey was with our students on a mission trip in Memphis. It was just the kids and I for an entire week so to say that blogging was on the back burner is an understatement! Thankfully we all survived but we are oh so glad that Daddy is back home.
It was really hard for me to not be on the trip with Currey and our students. They got to share about their experiences at church this weekend and their stories of personal growth and group bonding were inspiring. As always, they were so sweet sending me texts and pictures during the week. We are so blessed to work with such fantastic students.
Since I couldn’t join them I wanted to make sure they had plenty of yummy snacks for the road trip to Memphis. I made several new treats for them to enjoy and I wanted to share those recipes with all of you.
The first recipe was peanut butter granola bars. I have several granola bar recipes that I love but this had so few ingredients that I had to give it a try. These were a last minute decision so I just used what I had on hand. I used almonds instead of peanuts and honey instead of brown rice syrup. I was out of wheat germ and flax seed but those would have been outstanding additions. Sunflower kernels would have also been great. I baked mine and they were delicious. I should have added more honey because they did not stick together that well. I used about 1 ½ cups peanut butter but we really love peanut butter. These are a great breakfast treat or a delicious snack.
This is a great basic recipe that you can easily experiment with. If you are working on stretching your culinary skills this is a fantastic place to start. It’s easy to experiment with and will boost your confidence for experimenting with recipes.
I also made these pretzel chocolate chip cookies. I completely agree with this writer about using your favorite chocolate chip recipe and then adding the peanut butter chips and pretzel pieces. I was underwhelmed by the base recipe as the cookies didn’t flatten or spread well. I think this recipe would be great with a different chocolate chip cookie recipe but I’d be the first to admit I love the salty and sweet combination. And I was so busy getting these packed up that I didn’t get a picture of them. Bummer!
The best and most delicious recipe, in my opinion, was Trix Crispies. These are simply rice crispie treats made with Trix cereal. I’m sure it had something to do with the sugar cereal stuck together with melted marshmallow but you have got to give these a try. In addition to being delicious, they were pretty to look at. These would be a perfect treat for a birthday party or as a snack for your child to take to school.
