Although I continue to be in denial about fall, the seasons continue to change. You can find football on at our house all day Sunday (I’m watching a game as I type this post!) and even Blythe likes to watch the games with us. I’m not sure why but I think that football requires good snack food, especially if you are watching with a group of friends. These recipes are easy to prep and are simply delicious!
The first is a Pizza Roll recipe that I made for a party for our youth group recently. This recipe is easy to double or triple to feed a crowd and is very cost effective in regard to the ingredients that it requires. Serve these Pizza Rolls with Ranch Dressing or Marinara for dipping. I cut up a block of cheese but it would be just as easy to slice mozzarella sticks. The students inhaled them and I’ve added this to our entertaining food rotation. I also liked this recipe because I usually have the ingredients on hand.
The next recipe is Pioneer Woman’s Potato Skins. This dish reminded me of high school and countless nights spent at chain restaurants eating dishes that were fried, covered in cheese and completely unhealthy. We all thought these made for perfectly appropriate dinners and our metabolisms allowed us to consume this diet consistently. While I would never claim that this version is healthy, I hold to the idea that anything that I make at home has to be healthier than the restaurant version. At least I know exactly what’s going into them!
Make sure to give these plenty of time to bake. I was hungry and impatient so I didn’t let them bake as long as I should have. They were chewy instead of crispy but I think that would have been fixed if they had baked longer. Filled with bacon and cheese then topped with a dollop of sour cream, these are a perfect game day treat.
