I picked these recipes because I’m always looking for side dishes. I purchased a 5 lb bag of yellow potatoes after seeing a recipe on a blog using yellow potatoes. I loved that the writer used yellow potatoes. Yes, I realize that’s a totally random way to pick recipes but I was intrigued. Sure it’s silly but I’ve always cooked with baking potatoes. I wondered if these would taste different. Maybe I’d been missing out on something all along!
Sadly, I did not have the best of luck with 2 of these recipes. I was not crazy about the roasted potato recipe. While I loved the color and the ease of the recipe, I was unimpressed with the final outcome. I doubled the spices because we really like seasonings but I still didn’t feel like these had enough flavor. I think this recipe has major potential and if I wasn’t on this crazy year long journey to try 365 new recipes, I might take the time to tweak it to fit our family’s taste.
The potato pancakes turned out like hash browns. I was anticipating a thicker cakes and I didn’t cook the onions long enough. This recipe is not something that we will make again.
The Garlic Baked Fries were pretty good. I found this recipe on Pinterest. I didn’t realize until later that I set the oven to the Celsius temperature instead of the Fahrenheit! (I wondered what took them so long to brown!) Once I bumped the temp to 450 they browned beautifully. Now that I know my mistake I’ll be giving this one another try. You live and you learn!
