Remember when I told you that I was obsessed with shrimp? Well the obsession continues. We’ve enjoyed shrimp scampi during a recent at home date night, there was the Pesto Shrimp with Quinoa and shrimp tacos have become a part of our regular rotation. Buying shrimp in bulk and frozen makes it one of the cheapest proteins that I cook with.
Months ago, an employee at Whole Foods helped me find the perfect shrimp for tacos. Besides being knowledgeable about fish, he wasn’t phased by my daughter dancing around in circles or my son screaming at the top of his lungs. His love of good food was evident. As I shared what I was making he encouraged me to try the Whole Foods Tequila Lime seasoning mix as a marinade for the shrimp. Apparently, it’s what they use in the store for their prepared fish tacos so I thought it was worth a shot.
It’s hard to put into words how flavorful this spice mix makes shrimp and I’m sure it would be great on chicken and steak too. I’ve now made multiple trips to Whole Foods just to get more spice mix because we’ve gone through it like crazy.
I simply thaw a half pound of shrimp and once thawed I toss the shrimp with 1 Tablespoon spice mix. I allow the shrimp to marinate for 2-4 hours then grill them for 2-3 minutes a side. If you don’t have a Whole Foods near by don’t worry. I found similar spice blends, such as chipotle lime, in the spice section of my local grocery store.
I’ve loved our tacos so much that I wanted to create another dish using this shrimp. When I was thinking about holiday party appetizers I immediately thought about shrimp cocktail. I have no idea why, because I don’t know the last time I went to a party where shrimp cocktail was served.
But I loved the idea of a bite sized shrimp appetizer. The seasoning on the shrimp had me dreaming of Tex-Mex so I decided to make Mini Chipotle Shrimp Tostadas. This recipe is super easy and is a fun spin on shrimp appetizers. Simply top a bite sized tortilla chip with guacamole and place a grilled shrimp on top.
I made these for lunch and Blythe devoured 6 of them while I was plating the rest for their photo shoot. If my 3 year old approves, it’s clearly a great recipe. Whether you serve this as a fun holiday dinner for your family or use it as an appetizer for a festive New Year’s Eve Party you’re guests will be impressed.
ingredients
1/2 pound shrimp, thawed
2-3 Tablespoons, chipotle or tequila lime seasoning
1 1/2 cups guacamole
1 bag bite sized corn chip rounds
instructions
- Toss shrimp with seasonings and allow to marinate 2-4 hours or up to overnight.
- Grill shrimp on skewers or in a grill basket for 3 minutes on each side or until shrimp become a pale pink color.
- Spoon 1 tsp of guacamole onto each chip then top with a shrimp. Serve immediately.
