On Saturday night, we had an at home date night. It was perfection! We made a last minute decision to enjoy dinner in so we threw a menu together before I headed to the grocery store that afternoon. I was craving a steak which Currey always grills to perfection. I had pinned a Brussel Sprout recipe from Authentic Suburban Gourmet. I’ve made brussel sprouts a couple of times now and we’ve been surprised at how much we enjoy them.
These were a perfect side to a steak. The crisp bacon coupled with the maple syrup was an amazing flavor combination. Whether brussel sprouts are a family favorite or you’ve been waiting to give them a try, this recipe is a must. I’ve already added them to the menu again this week. Maple Bacon Brussel Sprouts
2 ½ – 3 Cups Brussels Sprouts, quartered
4 Strips Bacon
3 Tablespoons butter, cubed
3 Tablespoons maple syrup
Salt and Pepper to Taste
Rinse the brussel sprouts under cold water and dry. Once dry, quarter each sprout.
Cut bacon into 1/2 strips. In a medium skillet over medium heat, cook bacon until crisp. Strain the bacon out of the pan and drain on paper towels. Add the butter to the remaining bacon grease and heat until melted. Once melted, add the Brussel Sprouts. Saute until the sprouts begin to brown. Add the bacon and maple syrup to the Brussel sprouts. Heat until the syrup is caramelized on the Brussels sprouts. Season with salt and pepper.

Upon recommendation from a 6 year old friend, Emmie & I bought a real coconut (tried a drill, hammer, etc before we finally broke it open by throwing it on concrete!) and drizzled the juice all over a baking sheet of Brussels spouts. We sprinkled salt on top & let them bake until crispy. It was a very sweet treat….more like candy than a vegetable.
