One of the things that I am already enjoying about this blog is the creativity that it’s helping me cultivate in my kitchen. I’m amazed that in one short month (yes, I got a head start on cooking before the blog launched. I’m not completely crazy!) my level of comfort has so drastically changed. I’ve been able to write a handful of recipes and the sheer amount of ingredients I now regularly have on hand has made creating new dishes so much easier.
I had found a recipe for mango margaritas that looked delicious and we tried the recipe out recently when we had friends over for dinner. While the recipe was good, Currey and I were convinced we could make it better. Let me tell you, we made it better!
Mango Margaritas
- 3 ripe mangos, peeled and chopped
- 2 limes
- 1 cup tequila
- 1 cup triple sec
- ½ cup sugar, plus additional for rimming glasses
- Ice
Zest the 2 limes and combine the zest with 3 Tablespoons sugar. Use a slice of lime to go around the rim of each glass. Then dip glasses in the zest and sugar mixture.
Blend mango, juice from 2 limes, sugar, tequila, and triple sec until smooth. Pour half of this mixture into a separate container. Add ice to the remaining mango mixture. (The amount of ice that you use will alter the consistency of your drink. For ours, we filled our blender to the top with ice. We have a 5 cup blender and used 16 oz of mango mixture for each batch.) Blend until smooth. Pour into prepared glasses.
Use the ½ half of your mango mixture to make a second batch of margaritas when needed.
This drink is a great addition to any event you are hosting this summer. The consistency is perfect and the use of fresh mangos is much better than our first attempt that used mangos from a can. The lime added to the sugar around the rim is a simple detail that takes your presentation up a notch.
