Have you enjoyed an avocado yet this summer? Oh my goodness! At our house, we are convinced that avocados are exceptionally good this year. I’ve decided that one of my goals this summer is to eat my body weight in avocados. Trust me, I’m well on my way! I’ve been making different varieties of guacamole and enjoying chopped avocado on tacos and in salads. Our kids also love avocados so it’s something healthy they can enjoy as well.
When I saw this recipe for Mango Avocado Quinoa with Grilled Chicken from Climbing Grier Mountain, I knew it was a recipe I wanted to duplicate. (As a side note, go check out Climbing Grier Mountain. I love the pairing of avocado and mango and had use it when I made this salad. The flavors compliment each other so well. Currey declared this as one of his favorite dishes that I’ve ever made. That’s a big deal in my book! In addition to being simple, it’s a really beautiful dish. The bright avocado and mango add a festive touch to this delicious meal. It’s family friendly and both my kids ate 2 helpings.
Although I’ve been late to the quinoa craze, I’m totally smitten with this grain. I like the texture it adds to any dish and I love that it’s so versatile when cooking. Tossed with avocados, mango and grilled chicken, this quinoa dish screams summer. While we enjoyed this dish as our meal, it would be a great side dish as well. You could easily omit the chicken to make it a vegetarian dish.
Mango Avocado Quinoa with Grilled Chicken
Ingredients
3 cups cooked quinoa
2 chicken breasts, grilled and chopped
2 avocados, chopped
2 mangos, chopped
¼ cup cilantro
Juice of 2 limes
½ tsp salt
Directions
Combine quinoa, chicken, avocado and mango in a large bowl.
Add cilantro, lime juice and salt and toss again.
Serve immediately.
