It’s hard for me to believe but it’s been 2 years since we got a call from my parents telling us they’d be moving to Lubbock. And not only were they moving to a new town but they’d both be beginning new careers helping start a new campus of the church I grew up in. While we’d always known that my dad had thought about going into ministry one day, it was shocking to think that they would leave the place they had called home for over 30 years to begin a new adventure.
It’s been a sweet blessing to see them flourish in a new place and watch the new church grow. We’ve enjoyed getting to meet their precious friends who love them dearly and attend the church were they are both on staff. And now, on our trips back home, we get to spend time exploring a new city which has been really fun.
Thankfully, their new town has Taco Villa, one of our favorite Mexican fast food chains but we’ve also gotten to try lots of new restaurants. One of my favorites is West Crust Pizza, which was ranked “The Best Pizza in Texas” by Food Network Magazine. Clearly this pizza must be good! Every pizza we’ve tried has been exceptional but the Hill Country Pizza was so good I requested dinner at West Crust months before our last trip.
I have no idea why this pizza is called the Hill Country Pizza but it’s delicious! Simple roll out your favorite pizza dough, drizzle with a little olive oil, top liberally with red onion, candied pecans and crumbled bacon then top with mozzarella and feta cheese. The salty sweet combo is always one of my favorites! If your family enjoys pizza on Friday nights, this would be a great addition to your usual rotation of pizza. It’s a recipe that my whole family loves.
ingredients
1 batch pizza dough (My favorite recipe is from The Kitchn)
4 slices think cut bacon
¼ red onion, sliced thin
1 Tbsp olive oil
1/3 cup candied pecans
4 oz fresh mozzarella, sliced thin
2 oz crumbled feta
instructions
- Preheat oven to 450.
- Fry bacon in a large skillet until crisp. Remove bacon from pan reserving fat. Once bacon has cooled crumble the bacon.
- Return fat to heat and cook onions in bacon fat over low heat until tender. Drain onions in paper towel lined bowl.
- Roll dough out into a large circle. Pour olive oil over entire crust spreading with the back of a spoon as needed.
- Sprinkle bacon, onions and pecans evenly over the dough. Top with sliced mozzarella and crumbled feta.
- Bake for 10-12 minutes or until the crust is golden brown and mozzarella has melted and is bubbling.
- Allow to cool for 5 minutes then slice and enjoy!
