When I started planning Bennett’s birthday, I knew I wanted a western theme. We were going to be in Texas and it just seemed fitting. I started dreaming and pinning ideas to Pinterest. As the date got closer, I made some changes because I wanted the day to be fun. I didn’t want to be sleep deprived and stressed so a few of the details were left out. The party was a blast and I enjoyed every last moment. I’m slowing learning that there are things that I can let go of and still have a lovely event. Being a present and joyful mom (or host in general) is my goal and this party helped me realize letting go of some of the details didn’t impact the final outcome. Personal growth people!!!
I decided on a Frito Pie Bar because Frito Pie is a personal favorite and would be easy to make for a crowd. It could be simmering on the stove so I could enjoy our guests at the party. I used this recipe from Pioneer Woman as a guide. It was so delicious! Ree uses small bags of Fritos but I just used big bags of Fritos so people could get a portion to suit them. Guests could then add cheese, sliced jalepenos, chopped onion or mustard to their chips before adding chili.
Our friends and family raved about this chili. I had several requests for the recipe which I always consider a sign that the recipe was a success. I hope that you love this recipe as much as we did. I tripled this recipe to feed a crowd of about 20 people.
