Whoever created Pinterest is a genius in my book! I have found so many wonderful recipes from friends, discovered blogs I didn’t know existed, and been inspired to be more creative in my home and with activities for Blythe. But mostly, it’s just the food! So many other home cooks inspire me and I currently get most of my new recipes online.
When I saw this recipe for English muffin bread I was intrigued. I love English Muffins but I had difficulty understanding what this would look like conceptionally. Blythe would eat toast with pink jelly (raspberry or strawberry just as long as it’s pink!) every day so I assumed she’d be a willing taste tester.
Since making my first batch of English Muffin Bread, I’ve at least made it 4-5 additional times. It’s really that good. I love homemade bread and think this bread gets your day off to a great start. As she mentions in her post with this recipe, this bread is best toasted. I was not a fan until I toasted a couple of slices. Slather in butter and your favorite jam or honey for a delicious breakfast treat.
We created a great topping combination and it made an outstanding light lunch.
Strawberry Cream Cheese Toast
Several Slices of English Muffin Bread
Sliced Strawberries
2 Tbsp Cream Cheese for each piece of toast
1 Tbsp of Honey for each piece of toast
Toast the English Muffin Bread. While still warm, spread with cream cheese. Cover with sliced strawberries and drizzle honey over the top. Such a yummy lunch!
