When we lived in Chicago, our apartment was 4 blocks from our favorite Chinese restaurant. We honestly ate there at least once a week. It was so frequent that when I called Triple Crown they knew my voice as well as my order. The food was fantastic and a $10 dinner always yielded at least enough leftovers for a lunch. There were countless evenings when we simply walked up to grab our dinner. It was always a great time to chat about our day or just explore our neighborhood.
Currey and I have found some great restaurants but nothing that fills the Triple Crown void. I’ve tried to find a replacement fried rice recipe with little success but when I saw this recipe at Skinny Taste I knew I had to give it a try. To be honest, I was so surprised by the results.
This edamame fried rice recipe was fantastic! It was so easy and will easily become a week night staple in our home. This recipe made lots of leftovers and they reheated beautifully. I altered the recipe slightly by not adding egg or carrots. I have a weird thing about carrots in fried rice. I also couldn’t find shelled edamame so I just used snap peas and it worked out just fine. This recipe is worth your time and will likely become a staple at your house soon!

Looks delicious! I am going to give it a try. Also, don’t know if you have Sam’s in Chicago, but we buy bulk Edamame there & my kids eat it like candy. They come in the perfect packets for a snack, & the kids are so entertained taking it out of the shell.
