One of the best things about our job is that we get to spend time with students. If you haven’t spent time with teenagers recently, I’d encourage you to do so. (And if you are a parent of teenagers, I don’t mean your own kids!) I can guarantee that they will make you laugh, challenge the way you see the world and remind you that you too were once passionate and invincible. Our students encourage us regularly and often remind us to fiercely fight for the dreams we’ve often become too complacent to chase.
A couple of our girls didn’t have school one day so they come over for breakfast. One of the great things about feeding our students is they are always complimentary, thankful and gracious. Who wouldn’t enjoy that audience!
This is a recipe for Cheese Danishes that was made at Currey’s recommendation. While he knew I’d gladly make it, I also made it clear it would just be for him. The idea of a danish is appalling to me for some reason so before I’d even turned on the oven my mind was made up that these things wouldn’t pass over my lips.
Everyone was ranting and raving about these easy cheese danishes so I decided to take a “thank you bite”. Oh my goodness! These things are delicious. Like, get the ingredients at the store this week and surprise someone you love with them for breakfast this weekend. They will love you FOREVER. I promise.
Eat them warm out of the oven with a steaming cup of your favorite coffee. They are perfectly flakey and the filling is beautifully simple. You won’t be disappointed.
