Happy Valentine’s Day!
I’m not sure how you celebrate but this year we have a low key dinner planned at home. I’m making a new recipe for gnocchi that I hope is a winner. Gnocchi is one of Currey’s favorites. Our dinner will be simple so I’ve been searching for a fun dessert. While looking back through pictures to post I ran across the cupcake milkshakes that we made. They’d be a perfect addition to your Valentine’s meal.
If you live in the Chicagoland area than you are probably familiar with Portillo’s. It’s a delicious chain and we dine there weekly after our Satruday night service at church. Portillo’s has a delicious chocolate cake but they will also make it into a shake. When my brother and his wife visit a chocolate cake shake is always a must. It’s simply a slice of chocolate cake blended with ice cream.
Currey and I decided to make a batch of cupcake shakes at home when we had leftover cupcakes one night and the results were delicious! We made two different versions but the possibilities are literally endless.
The basic recipe is:
3 large, rounded scoops of ice cream
1 cupcake with icing
Syrup of your choice
Combine all in blender. Serve.
The first one we made was a chocolate cupcake with vanilla ice cream. We added a drizzle of chocolate syrup for extra flavor. It was really good but we wanted to be even more creative.
The other cupcake that we had was chocolate with mocha icing. In addition to the cupcake and icing we added 2-3 Tbsp of strong brewed coffee, which added to the coffee flavor. Incredible!
If you are looking for a last minute Valentine’s dessert, give these shakes a try. Just grab a couple of store bought cupcakes and ice cream of your choice and enjoy! I’d love to hear about any flavor combinations that you create. Such a fun and easy dessert option!
