Blythe is a girly girl to her core. If you saw us out running errands she would likely be wearing a crown and a large assortment of jewelry. She brings the world joy. I love to watch people smile when they see her. I take no credit for her ability to accessorize and I believe it’s mostly due to the amount of time that she spends with teenagers in our youth group. Blythe began wearing bracelets last summer after seeing so many of the girls with bracelets up their arms. She idolizes our students and loves for them to do her hair or compliment her outfits. Our kids are loved and adored by all our youth group kids. It’s a sweet blessing!
So how do we celebrate the birthday of one of these students? With Crystal Topped Cupcakes of course! Remember Blythe’s birthday cake? I used the same cake and frosting recipe but dipped the tops of the cupcakes in rock candy. I found several colors of rock candy at a local candy store but decided on clear rock candy as I thought it looked like diamonds. It was a really inexpensive decoration and I loved the look of the finished product.
These cupcakes were delicious and unique. The process is so easy. Start with your favorite cupcakes and then use a soft and creamy icing to top them with.
Chop 2 cups of rock candy and a shallow bowl. Then dip the cupcake into the rock candy.
Lightly press the candy into the frosting so that it stays in the frosting and doesn’t fall off.
Deliver to your favorite princess or precious friend that needs a glamorous treat!
