Hello sweet friends! Thanks for sticking around as I slowly return to the world of blogging. Readjusting to life after Haiti continues to take longer than I ever imagined. I’ve been home for 2 weeks and still can’t talk about the trip without crying. There’s still so much to process but I continue to feel so thankful for the opportunity to serve.
One of the most beautiful aspects of our trip was that we began and ended each day as a team. Our day began with devotions, prayer and breakfast then our dinnertime around the table was were we often processed all the experiences our day had held. After dinner we got to look through the day’s pictures. Yet another opportunity to laugh, cry or tell stories behind the pictures.
To my delight, our days also began with strong coffee. It was a familiar part of my daily routine that I was able to continue even though I was far from home. Sometimes simple comforts are the sweetest blessings. We were able to purchase bags of the coffee that we enjoyed all week long and I wanted to be able to share a small detail of my trip with Currey by bringing a couple of bags of coffee home.
As we began planning our Valentine’s dinner, Currey had the brilliant idea to add the coffee grounds to a steak rub. While I do the majority of the cooking at our house, he is the resident griller. He used this rub on filets but I imagine that it would be wonderful on any steak. The depth of flavor was unparalleled to any steak rub he’s made to date. The coffee is a perfect compliment to the other spices and is a different twist on our usual recipe.
Whether you are looking for a great dinner for a date night at home or have company coming that you want to impress, you won’t be disappointed with this recipe. Serve with roasted Brussels sprouts or a baked potato and it’s a steak house meal at a fraction of the cost.
ingredients
1 Tbsp Ancho Chili Powder
1 1/2 Tbps Coffee, finely ground
1/2 tsp Paprika
1 tsp Oregano
1 tsp Corriander
1/2 tsp Freshly ground pepper
2 tsp kosher salt
1/4 tsp garlic powder
instructions
- Brush both sides of each steak with canola oil. Press the rub onto 1 side of the steak making sure to cover it completely.
- Place the steaks on a hot grill, rub side down. Cook to desired doneness.
- Allow steaks to rest for at least 5 minutes before cutting them. Serve and enjoy!
