Since I’d bought shrimp for the garlic shrimp recipe, I decided to use the rest for a coconut shrimp recipe. I’m not a huge fan of coconut in sweets and desserts but coconut shrimp is one of my favorite seafood dishes. When I found this recipe on Pinterest I knew I had to give it a try.
Again, this was a meal that made us feel like we were out at a restaurant. Getting to the end result was a bit of a challenge but the finished product was worth the work! Just a few pointers…don’t beat the egg whites into fluff. I had difficulty getting the egg onto the shrimp because I had beaten the eggs too long. They were stiff and clumped on the shrimp instead of just coating it. Getting the coconut to stick to egg clumps was not pretty. Also, I could not find pineapple preserves. After going to 3 grocery stores I decided on a plan B. We used an apricot preserve with the jalapeño and it was fantastic. Don’t skip the sauce! It was a great accent to the shrimp.
Again, this would be a great date night dinner. You might not be able to enjoy a beach vacation but make a tropical drink with this dinner and you can feel like you are worlds away with the one you love!

Thanks so much! They were delicious and are worth a try. I tried them at a restaurant a week ago and this recipe is better than dishes that I’ve had out.
