When discussing our Father’s Day menu, Currey requested steak. The funny thing about this request was that it meant Currey would be cooking his own celebratory lunch. Grilling isn’t something I’ve had to master because Currey can perfectly grill a steak. I see no need to mess with perfection!
As we have learned to cook, we’ve realized there are things that we can simply make better at home. The beauty of making recipes at home is that they are often cheaper as well. Steaks are a perfect example. Even if you buy nice steaks at the butcher, they’ll still only cost you half of what a steak at a restaurant would.
While we are typically steak purists who only season with salt and pepper, I had seen a recipe for a compound butter that I thought Currey would love. Bon Appetit had featured several recipes featuring hot sauce and Currey agreed that this butter would be a welcomed addition to the steaks. You simply combine butter, cilantro and hot sauce to create a flavorful butter. As the butter melts atop a hot steak, the steak is infused with the flavors in the butter. So simple and delicious!
This Cilantro and Hot Sauce Butter can easily be prepared ahead of time so it’s one less dish to prep at meal time. The flavors compliment each other beautifully and once the butter has melted you have a nice cilantro garnish. If you aren’t a fan of steak you could use this on grilled corn on the cob or grilled salmon. If you love the flavor of hot sauce, give this butter a try!
Cilantro and Hot Sauce Butter
Ingredients
4 oz room temperature butter
1 Tbsp cilantro, chopped
1 Tbsp hot sauce (I used Cholula)
1 generous pinch of salt
Mash butter, cilantro, hot sauce and salt. Continue to mix until all ingredients are combined.
Cover and refrigerate until ready to use. Spoon onto steaks and enjoy!
