Do you like chorizo? If so, you must try this Chorizo Cheeseburger recipe. Not sure if you like chorizo? Then this is a great recipe to try. At our house we love chorizo but to be honest I’m having a more difficult time finding it than I used to. I was dying to try this recipe so I bit the bullet and went to Whole Foods. I’d never bought chorizo there before and I’ll never buy chorizo anywhere else. It’s by far the freshest and most flavorful chorizo I’ve ever had. They sell it in their fresh meat department or if you are feeling extra adventurous, they carry buffalo chorizo in the prepackaged meat section. Like all things at Whole Foods, it cost a little more (I think I paid $3.50 for half a pound) but it was worth every penny. If you live in an area without Whole Foods, check out your local meat market or Latino Grocery store.
The chorizo adds moisture and flavor to the burger. Additionally, it adds some heat. The minor change that we made to these was we made sliders instead of burgers. I was thrilled to discover my local Target carries a 12 pack of slider buns for $2.29. All the other brands seem to run $3.50+. I seem to eat less with sliders and it’s a manageable portion for Blythe. And really, they are just cute. The first time we made these we ate them simply with Gruyere cheese. They were so marvelously delicious. I was really excited because I halved the meat and froze the other portion to make the following week. Unfortunately, round 2 wasn’t as good. We noticed a huge difference in flavor between when the meat was fresh and frozen. Hands down, it was 10 times better fresh. Lesson learned!
What made the second round more bearable was the simple addition of pickles to the burgers and these Homemade Tater Tots. I used pop chips as the recipe suggested and I loved the crunch they added. Apparently we’ve been living under a rock because I’d never had pop chips before. My whole family liked them so they are added to next weeks grocery list. I’d lowered my expectations for these as I knew they wouldn’t taste like my beloved Sonic tater tots. They are baked not fried so I assumed I’d enjoy them less. I was pleasantly surprised by the texture and flavor. They were a perfect compliment to the Chorizo Cheeseburgers. We generously sprinkled them with kosher salt after baking and served them with ketchup. The pop chips provide a perfect crunch to the creaminess of the potatoes inside.
