Do you make New Year’s Resolutions? I don’t usually make resolutions but I do like to sit down and write goals for the year. This year some of those goals are to read a book a month, take a photography class and continue to go on monthly dates with Currey. I like to set goals that challenge me but are also attainable. Making a list of goals that I can’t accomplish seems like a deterrent rather than an inspiration.
That’s why I don’t plan to make a resolution to loose weight/eat healthier/exercise more this time of year. I’m all for healthy eating but it seems people go a little crazy with some unrealistic plans around January 1st. My Pinterest feed has been filled with salads and detox drinks for a solid week! Again, manageable goals are how I like to implement food and exercise changes.
After the holidays, we did need a bit of a detox from junk food. We’d all indulged in more food and sweets than usual and my body was craving healthier foods. Currey and I have replaced a meal a day with a smoothie or vegetable juice. We cycle through juicing every couple of months and it’s something that easy for us to do, not some huge lifestyle overhaul. My kids also like the drinks so it’s another way to get them to eat veggies.
Really, I can stick to drinking green juice and veggie filled smoothies because I can then rationalize eating cake. Like this amazing cake! I’ve always called this cake a Better Than Sex Cake but after I caught myself spelling the name out in front of my children 18 times I decided this cake needed a new name! Something a little more family friendly. We’ve settled on calling it Chocolate Heath Bar Cake. Original I know!
This cake is so easy and is always a crowd pleaser. Simply bake a boxed cake mix and while the cake is hot drizzle with sweetened condensed milk and caramel. Sprinkle with toffee chips, frost with cool whip then garnish with more caramel and toffee. Delicious!
ingredients
Chocolate Cake Mix
1 (14 oz) can sweetened condensed milk
1 (12 oz) jar caramel sauce
1 tub Cool Whip
1 cup Heath toffee bits, divided
instructions
- Bake cake according to the directions on the box.
- Once baked, remove from the oven and immediately poke holes over the entire cake using a fork or skewer.
- Slowly pour the condensed milk over the entire cake then pour the caramel over the entire cake. Sprinkle 1/2 cup of the toffee pieces over the top of the cake. Allow the cake to cool to room temperature then refrigerate for at least one hour.
- When ready to serve, frost with Cool Whip. Sprinkle remaining toffee pieces on top. Also, cake could be topped with drizzled chocolate, caramel sauce or both.
- Serve cold.
