Is it just me or is it hard to believe that it’s already December? We had a wonderful Thanksgiving and have already kicked off the holiday season by putting up our Christmas tree. This was the second year in a row that we went to a tree farm to get a tree with friends. It’s a great way to begin the holiday season and we’ve agreed that it’s a family tradition we want to continue.
There are so many reasons to love December and as our calendar has begun to fill up with dinners, programs and parties I’m reminded of how much I enjoy all the time spent with friends. We have so much to celebrate and I love that we spend this month celebrating with those we love.
With each invitation I begin dreaming up menus and getting excited about all the new dishes I’ll get to make. I’ve decided to post every day until Christmas and each day I’ll be sharing a different recipe that will be perfect for all the Christmas events you’ll be attending. I’m calling this series “25 Days of Entertaining” and I hope that you’ll find a recipe or tow that you can use. Whether it’s appetizers for a party you are hosting or a dessert for your child’s class party, they will be lots of options to choose from!
To kick this series off, I’ll be sharing a favorite recipe from my mom’s kitchen. Chocolate Chip Pecan Pie is the easiest dessert in my repertoire. We actually enjoyed this pie at our Thanksgiving dinner and I’m planning on making a dozen to deliver to our neighbors.
Chocolate Chip Pecan Pie is mixed by hand in single bowl and can be whipped up in 5 minutes. I’ve yet to perfect a homemade piecrust so I use a deep dish frozen crust. I like to bake mine in the morning so that it has plenty of time to set up before serving. You can also serve it gooey and warm with a giant scope of ice cream. This pie would be easy to change up by adding a different type of chocolate chip (white or dark) or swap out the type of chopped nuts (walnuts or hazelnuts). There are lots of possibilities!
ingredients
½ c flour
1 c sugar
1 stick butter, melted
1 t. vanilla
2 eggs
1 c. chocolate chips
1 c. chopped pecans
instructions
- Combine the flour and sugar in a large mixing bowl.
- Add butter, vanilla, eggs, chocolate chips and nuts. Stir until combined.
- Pour mixture into an unbaked pie shell. Bake at 325 for 40-45 minutes or until the top of the pie is golden brown.
