If you follow me on Instagram, you saw a picture that I recently snapped of some birthday treats. Vanilla Sugar Bakery opened recently and it’s right by where I work. I’ve driven by countless times but they are usually closed by the time I’m headed in to work. A couple of days before my birthday I decided to indulge in a few treats and I was blown away by the perfection of each of the sweet treats we tried.
I immediately “liked” them on Facebook to show my support of their amazing baking skills but that has left me with their always changing menu in my news feed every day. Every day people!!! I drool each morning as I read their menu and I exercise all of my self control to not make daily trips to scoop up one of each item listed.
A couple of days ago, they had a cheddar chive scones listed on the menu and I couldn’t get the thought of that scone out of my mind. I’m a sucker for savory breads. I was excited when I goolged recipes and realized I had all the ingredients to make scones on hand. They paired perfectly with the grilled romaine salad and came together in less than 30 minutes. A big win in my kitchen!
I was amazed at how tasty these scones were. The chives added a subtle onion flavor and were a perfect compliment to the sharp cheddar cheese. Whether you pair them with a salad or enjoy one alone for lunch, these cheddar chive scones are a savory treat.
Cheddar Chive Scones
Ingredients:
- 1/2 cup milk (plus 2 tablespoons for brushing tops of scones)
- 2 large eggs
- 2 tablespoons finely chopped chives
- 2 cups unbleached all-purpose flour, more for rolling out biscuits
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 6 tablespoons (3/4 stick) cold unsalted butter
- 1 1/2 cup grated sharp cheddar, divided
Directions:
Preheat oven to 425°F.
Whisk together 1/2 cup milk and eggs in a small bowl. Stir in chives and set aside.
Combine flour, baking powder, salt, and black pepper in a food processor. If you don’t have a food processor you can use a large bowl. Add cold butter and pulse (or quickly blend with your fingertips) until mixture resembles coarse meal. Do not over-mix.
Add 1 cup of the grated cheese and pulse just to combine. Add milk mixture and process just until moist clumps begin to form. Turn out dough onto a lightly floured surface and shape into a ball.
Cut dough ball in half, then flatten each half into an 8-inch round circle. It should be about 1/2-inch thick. Cut each circle into 6 wedges. Brush tops of scones with milk and sprinkle with remaining 1/2 cup of cheese. Place on a parchment lined baking sheet. Bake for 12 to 15 minutes or until golden brown.
