Do you have a tradition of what you eat on Christmas morning? For the last 4 years I’ve made Pioneer Woman’s French Toast. It’s easy because it’s made the night before and then it bakes while we open presents. It’s inexpensive and delicious which makes it one of my favorites.
Although I love tradition, I may have found a new Christmas morning breakfast. The idea for Captain Crunch French Toast came from a local breakfast place. We’ve been with our students for breakfast before and they raved about the Captain Crunch French Toast. The sweetness and crunch of the cereal adds texture and flavor to plain old French Toast. After my first bite I totally understood why this was a dish the girls loved!
I’m not sure why it took me so long to recreate this French toast in my own kitchen. I first tried making Captain Crunch French Toast over the summer while on vacation with my family. It was good but I hadn’t finely crushed the cereal before coating the toast. The cereal burned on some of the pieces and I knew that I needed to work on this recipe a little more.
I was craving breakfast foods this week so I made Captain Crunch French Toast for lunch. This time around I ground the cereal in the food processor so that the consistency was even. I then dipped the bread in a milk and egg mixture followed by the crunched cereal. Having the cereal all the same size made for more even cooking and each piece browned to perfection. This stuff is glorious!
If you are looking for a fun new recipe for Christmas morning, this French toast is perfect. It might just be what my family eats around the tree! Both my kids polished off two pieces, which was impressive. While I recognize that it’s bread coated in sugar cereal and fried, the fact that Bennett would sit still long enough to eat 2 pieces it means it’s outstanding.
Now just a quick note about the bread. I’m a firm believer that French toast is made from think sliced bread, preferably Texas Toast. I usually go to more than 1 store to find Texas Toast but it’s worth the extra work in my opinion. I think it has a better end result than sandwich sliced bread but that’s simply my opinion!
ingredients
4 cups crushed Captain Crunch Cereal
3 eggs, beaten
1 cup half and half
10 slices Texas Toast or thick cut bread
butter for frying
syrup
instructions
- Combine eggs and half & half in a shallow dish.
- Pour cereal into another shallow dish.
- Melt a 1/2 Tbsp of butter in a large skillet over medium heat. As butter melts, dip 1 slice of bread in the egg mixture then coat in cereal.
- Shake off excess cereal and place coated bread in the melted butter in the skillet. Cook 3-4 minutes per side, or until golden brown.
- Repeat with remaining bread until all slices have been coated and cooked.
- Serve with warm maple syrup.
