Random question for you…do you have those restaurants that you are kind of embarrassed that you love? Please oh please tell me I’m not alone in this! I did get some validation from Kristan of Confessions of a Cookbook Queen. She recently posted a Millionaire Pie Recipe and she admits this pie was inspired by Furr’s Cafeteria. This was espcieally funny to me because I have my own favorite pie recipe inspired by Furr’s Cafeteria.
If you aren’t from the south then you may not be familiar with this cafeteria chain. And if you are from the south you may be horrified by my love of Furr’s. I even requested that my family eat there for Thanksgiving the year I was pregnant with Blythe. Although I think everyone would have preferred a homemade feast, no one was going to tell a very pregnant me that I couldn’t enjoy Thanksgiving there. Essentially, Furr’s is a buffet stocked with southern favorites and countless options of comfort food. As a kid the highlight of going to Furr’s was getting to pick dessert. It was always a tough choice between buttermilk pie and tapioca pudding. Yes, with my weird issues with food textures I actually love tapicoa pudding. I’ve never promised that I make sense.
Any how, this post is about buttermilk pie. It’s still one of my favorites. I actually love trying any new recipe that requires buttermilk because I never end up using all the buttermilk I need for a recipe. Leftover buttermilk always gets turned into buttermilk pie. If you’ve never had buttermilk pie, it’s simply a custard style pie. This pie comes together in a few minutes then bakes to perfection in about an hour. If you love custard pies or just need a new recipe to use up leftover buttermilk, this recipe is worth your time! I hope that you enjoy this buttermilk pie as much I do.
Buttermilk Pie
Ingredients
1/2 cup butter
1 1/2 cup sugar
3 teaspoons all-purpose flour
3 eggs
1 cup buttermilk
1 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1 unbaked pie crust (I prefer the deep dish for this recipe)
Directions
Preheat oven to 350.
In the bowl of your stand mixer, cream butter and sugar until smooth. Add the flour, eggs, buttermilk and vanilla. Mix until completely combined.
Pour filling into pie shell. Sprinkle top with nutmeg.
Bake for 60 minutes or until the pie is golden brown. Cool completely then refrigerate.
