As I’ve mentioned before, I love being able to feed my family. Since Currey and I live so far away from both our families, the meals we share together are priceless. There are several must eat places when we visit Texas but we are finding more and more that we are enjoying fewer meals out and more meals in. When you are at home meals seem to be more leisurely, I don’t worry about my kids disrupting another diners meal and the food often tastes better too. I get time cooking with my sister in law or my dad and my kids are occupied and loved on by grandparents, great grandparents and aunts and uncles. To me it’s simply perfection.
On the last day of our Texas trip to celebrate Bennett’s 1st birthday, I wanted to share one more meal with my family. I was browsing my Pinterest boards and realized that I could whip these Blueberry Biscuits up in no time. While I love feeding family, our time together is precious so I don’t want to spend endless hours in the kitchen.
I’m a sucker for lemon and blueberry together. A big buttery biscuit topped with lemon glaze sounded delish! I used fresh blueberries but plan on making these again soon with dried blueberries. While the directions look intimidating (at least they did to me!) I promise that you’ve be enjoying warm blueberry biscuits in about 20 minutes.
Blueberry Biscuits
IngredientsBiscuits:
2 Cups Flour
1 Cup cold milk
1/3 Cup sugar
5 T of butter (cold or frozen and divided into chunks)
4 tsp baking powder
1 tsp salt
3 oz of blueberries (fresh or dried)
Glaze:
1 Cup of powdered sugar
1/8 Cup of water
1 tsp of vanilla
½ tsp of lemon juice
Directions:
Preheat oven to 450.
Mix salt, sugar, flour, and baking powder in a bowl. (I used my food processor with outstanding results). Add the cold milk into dry ingredients and mix. As dough begins to form, take chunks off butter and spread them evenly over dough.
Fold and knead dough until the butter chunks are evenly spread throughout dough.
Transfer dough to floured cutting board and roll flat to about ½ thick. Cut approximately 8-10 Blueberry Biscuits with a biscuit or cookie cutter. (I used a glass because I didn’t have a cookie cutter on hand. It worked just as well.)
Place biscuits on a parchment lined baking sheet and bake for about 7-12 minutes. The chunks of butter will melt as the biscuits cook and may bake onto the parchment paper. It’s just part of the process and makes these biscuits extra tasty!)
While the biscuits bake, make the glaze by combining the powdered sugar, water, vanilla and lemon juice.
Once biscuits are done baking, brush each biscuit with melted butter then brush with glaze.
Serve with fresh fruit and your favorite cup of coffee or tea.
*If you notice the butter start to melt after kneading and before cutting, it may be necessary to return the dough to the freezer for 10-12 minutes. Once cold, pick back up where you left off in the baking process.
