In case you haven’t noticed, I’ve been in a bit of a blogging funk. We’ve been eating really basic meals and I haven’t spent much time in the kitchen creating anything interesting. For all of you that believe we continually eat gourmet meals, please find peace in knowing we eat Kraft mac and cheese at least once a week. On occasion, we just eat to for sustenance!
Sometimes the ideas and recipes flow freely and other times I’m convinced I’ll never create a new recipe for the rest of my life. I’ve spent the last couple of weeks cooking from the pantry and freezer. I realized we had a serious grocery excess so I’ve been using things I have on hand to make meals. It’s been a fun and interesting challenge and has saved us some serious money too. Double win!
I was thrilled to discover a jar of bacon jam in the fridge. Remember when I made bacon jam? Let me tell you, it does keep for months in the fridge. Right after making it, we enjoyed bacon jam on toast for breakfast for several days in a row. And then I completely forgot about the jars pushed to the back of the fridge.
As I’ve worked at cleaning out the cupboards and the fridge, I’ve been amazed at some of the treasures I’ve found. While a few of those “treasures” are unidentifiable due to mold, a limitless supply of chocolate chips and jars of olives, peppers, and bacon jam have all been rediscovered.
I was dreaming of other ways to use bacon jam and was struck by the idea to use it on pizza. Oh my goodness it was divine! To add to the yumminess, we’ve been making stuffed crust pizza. It makes any pizza that much tastier. If you are looking for ways to use up extra bacon jam I’d highly recommend bacon jam pizza. Or if you are simply wanting to dress up your homemade pizza, simply try making it stuffed crust.
ingredients
1 batch pizza dough (homemade or store bought)
4-6 Tablespoons Bacon Jam
4 oz fresh mozzarella, sliced thin
1 cup arugula
4 sticks of string cheese
instructions
- Preheat oven to 500.
- Roll dough into a large circle. Take string cheese and pull each piece apart length wise. Place the strips of cheese along the edges of the dough. Roll the cheese up in the edge of the pizza dough.
- Transfer the dough to a parchment lined baking sheet. Spread the bacon jam over the dough to all the edges. Place sliced mozzarella per the entire pizza.
- Bake for 8-10 minutes, until the crust is golden brown and the cheese has browned and bubbled.
- Top pizza with arugula. Slice and serve.
