These Bacon Hash Brown Quesadillas come from Bobby Flay’s Mesa Grill Cookbook. If you love Southwest cuisine, you need to buy this cookbook immediately. I love Bobby Flay’s use of spices and his creativity in the kitchen. This cookbook also holds a special place in my heart. I lusted over this cookbook for months and then one day I came home from work to a gourmet dinner prepared by my husband. Not only had he gifted me with the Mesa Grill Cookbook, he made me a delicious meal out of it for me. I’ve had the book for 4 years and we still regularly make those 2 recipes. Every time we enjoy them both it’s a sweet reminder of how lucky I am to have such a thoughtful husband.
At our house, we love breakfast. We have breakfast for dinner at least once a week. So many breakfast foods are hearty enough for dinner and this recipe is a perfect example. I had never made hash browns this way and now I’ll never try to make them any other way. They were perfect! The top tortilla was perfectly crisp and the cheese brought everything perfectly together. We didn’t use any garnish but I think this would be great with avocado, salsa or sour cream. Also, instead of scrambled eggs, I made eggs over easy and we loved that addition to the menu.
This is a recipe that needs to go on your must try list. Make a special brunch for the ones you love this weekend or just spice up your weeknight menu plan. Check out the complete recipe here.

This looks like a great recipe….but everything from Bobby Flay is a great recipe. I love my “Mesa Grill” cookbook that you guys gave me for Christmas a few years back. We also made a point of eating brunch at the Mesa Grill in Las Vegas (Ceasar’s Palace) a couple of years back. It was one of the finest meals we’ve ever had. Keep up the great work.
Love,
Dad
