Hello there friends! I wasn’t planning on taking such a long break from blogging but I’m glad I did. Even a short break gives me time to miss blogging. I enjoy sharing recipes and keeping up this blog but constantly churning out posts can be draining. I’m returning from my hiatus refreshed and I’ve got some great posts headed your way in the next several weeks.
Here in Illinois, we completely skipped Spring. Our days have been filled with sunshine and warm temperatures. In my opinion, it’s just glorious! During the summer we eat lots of salads and sandwiches for lunch. With so much fresh produce available, it seems only appropriate to spend the summer enjoying it.
One of my favorite summer foods are avocados. Yes, you can purchase avocados all year long but during the winter months they just aren’t the same. Once we can buy bright green, creamy avocados, we begin eating them in any recipe I can create.
My dad was the original creator of the Bacon Avocado Sandwich and I’ve continued to make them for years. They are so simple and perfectly capture the flavors of summer.
Start by toasting bread. I prefer to make these sandwiches on crusty bakery bread.
Then spread ½ a mashed avocado on one slice. Sprinkle with a pinch of garlic powder.
Add 2 slices bacon, each broken in half to better fit on the bread.
Top with ¼ cup Alfalfa Sprouts.
Then enjoy!
This is a light and delicious lunch that’s easy to throw together. I hope that your family enjoys it as much as ours does.
ingredients
4 slices bread
1 avocado, mashed
Pinch of garlic powder
4 slices bacon
1/2 cup Alfalfa sprouts
instructions
- Toast bread then spread avocado mash on 2 slices of bread. Sprinkle avocado with garlic powder. top with bacon, sprouts and second slice of toasted bread.
