We are currently on a salad binge here at the Blandford house. Currey and I just returned from an incredible anniversary trip (more on that in posts to come). We spent a wonderful week touring New England. As we were planning our trip, we spent a lot of time looking into restaurants in each city where we would be staying.
Our research paid off and we enjoyed some truly delicious and innovative meals while we were away. I loved every last calorie but as we’ve returned to the real world I’ve needed much more balance in my diet. And lots of green veggies!
Our salads have been extra enjoyable because we are using lettuce we’ve grown in our garden. We grew lettuce last year with great success so we increased the varieties we planted this year. In the week we were gone our lettuce went crazy so there’s plenty to eat. There is something incredibly satisfying about enjoying food that you grew yourself!
My whole family devoured this chopped salad. I loved how easy it came together. I also thought it’s worth documenting how my children eat this salad. Completed dissected with a side of barbecue sauce for their chicken. I find it hilarious!
Bacon and Avocado Chopped Salad is a simple recipe that requires only 5 ingredients. Crisp lettuce is topped with fresh mozzarella, crumbled bacon, chopped chicken and avocado. Add your favorite dressing and you have a quick and easy weeknight dinner. What’s your favorite summer salad recipe?
ingredients
6 cups lettuce, washed
2 grilled chicken breasts, cubed
1 large avocado, cubed
4 oz fresh mozzarella (I used small cherry sized mozzarella balls)
6 slices bacon, crumbled
Favorite salad dressing
instructions
- In a large bowl, toss lettuce with chicken, bacon, avocado and mozzarella.
- Drizzle with desired dressing and toss again. Serve immediately.
