When I saw this recipe for Avocado Grapefruit Quinoa Salad on Pinterest, it looked perfect. I love avocados and grapefruit and had never cooked with quinoa before. I’ve never been much a salad eater but my 365 recipe challenge continues to expand my food horizons. I’m loving all the fresh summer ingredients that are in season and really believe that using quality ingredients is helpign me create all sorts of delcisous meals. I loved the flavor and texture that the quinoa added in addition to the beautiful colors of the grapefruit and avocado. This salad was almost too pretty to eat.
I also found that I had a couple of cups of quinoa left over. As part of this challenge I’m working at using up the food in my refrigerator so that as a family we are wasting less. I hated for all the quinoa to go to waste so I began searching for recipes that use quionoa. I stumbled upon a recipe for quinoa cakes that I decided to try. I made a few alterations including browning the onion which I thought added flavor. Also, these cakes should be salted once they are moved out of the pan. We were amazed at what a huge difference the salt made. We ate them just as cakes but they would have been great with a small salad. They could also make a great side dish instead of an entree.
