Things have been a little crazy at our house recently! We came back from Thanksgiving vacation 10 days ago and our kids have been sick for the entire 10 days. I thought that we had turned a corner so we headed to church this morning since Currey was preaching. Unfortunately, I got called to get both kids from their classes. For a little perspective, I’ve never before been called to get either of my kids at church. I feel like we are in survival mode and we pray that healing comes soon.
Needless to say, meal prep has not been my biggest priority. We’ve been making new recipes but I’ve been doing lots of crock pot cooking and making simple meals with minimal prep. I saw this recipe for Apple Peanut Butter Waffle Sandwiches and I thought it would be a perfect simple lunch. I had all the ingredients on hand. Not only was this effortless to prepare, we were surprised at how tasty and hearty these sandwiches were. You simply slice an apple very thin. Toast 2 waffles and spread them both with peanut butter. Layer 3-4 apple slices on one waffle and then top with the second waffle. Easy Peasy!!

Whenever I need a go to meal that is easy I have a simple homemade pizza recipe that I use. Within a few minutes its baking in the oven.

Quick meal – Frito pie (canned chili / Wolf Brand turkey chili is my fave, shredded cheddar cheese and Fritos). Easy greasy.
