Every year we make small homemade treats for our neighbors. It’s nothing too fancy but we feel like it’s an important gesture. This year we delivered little Christmas Chinese take out boxes filled with these sweet treats.
The first were these Lace Cookies. I chose this recipe because the pictures were beautiful and this cookie seemed unique. Winning combination in my book! These may be the easiest cookies that I’ve ever made and are some of the most delicious. You simply place small spoonfuls of batter on the parchment paper and they bake into these beautiful cookies. Since we were stacking ours we didn’t add chocolate to them but I’m sure that addition would make them even more amazing. Perfect for the holidays or any time you want a small sweet treat!
I had also seen a Homemade Turtle recipe on Pinterest that I thought I had to make. I couldn’t find caramel squares as it seems everyone now uses caramel bits so I substituted with Werther’s Soft Caramels. They are not as soft as the Kraft caramels and were difficult to roll out. I found dark chocolate disks at Michael’s. These came together quickly and were also delicious. We had to wrap them up quickly as we kept sneaking them off the pan to eat!
The last treats I made were Homemade Peanut Brittle and Pistachio Brittle (Shown at the top of this post.) Oh my goodness!! I’m not a fan of peanut brittle but this stuff was amazing!! And don’t even get me started on the Pistachio Brittle. It went straight into gift bags because we couldn’t get enough. If pistachios weren’t so expensive I would make this brittle by the pound on a weekly basis. It’s hands down one of the best things I’ve ever made in my kitchen.
