As I mentioned in my previous post, I love cooking and feeding people. Although I love sitting down to dinner with my family, I also really enjoy sharing a meal with friends. Early on in our marriage we realized that sitting around our dining table, sharing good food with people brings you together. Acquaintances become friends, good friends become closer and life is shared.
Let me introduce you to some of those friends that we love to share meals with. This is Clare, Laura, Dan and my precious husband and little one. We are heading into our 4th year of youth ministry together (Seriously? Where has the time gone?) and we would not have survived the ups and downs without these 3. These are the people we do life with. We are together at least 3 times a week, often laugh so hard we cry and enjoy each others company more than words can express. These are the friends that all people should have. They are loyal, encouraging and speak truth in your life. I hope you have friends like these too!
I decided that a dinner together would be a perfect kick off to my cooking adventure. Let me just start with, this pizza is AMAZING! Simply amazing! Everyone raved at our dinner get together and this dish has become a weeknight staple in our home. I’ve tried dozens of pizza crust recipes and this one is the best I’ve ever tasted. It’s easy to double or triple and I almost always have a batch on hand for a quick and easy dinner.
One of the most notable things about this recipe is that it’s what exposed me to fresh mozzarella. While I had used fresh mozzarella in the past, the price difference had kept me from regularly use it. Thankfully, most grocery stores carry several brands (I buy the store brand at my grocery store and think it is just as good as the name brand) and I’ve found it is comparable in price to shredded mozzarella. Using barbeque sauce as the pizza sauce coupled with melted mozzarella, sautéed onions and grilled chicken is a winning combination!
