We are currently in a season of life where it’s easier to have date nights at home. Thankfully our little man is finally on a schedule and sleeping better but it’s still hard to leave him at 4 months old. We decided to celebrate our 7-year anniversary by cooking together at home. We waited until the kids were in bed and enjoyed catching up while we made a scrumptious dinner.
Whenever I want a great steak recipe, I look to Bobby Flay. The man knows how to grill and every steak recipe we’ve tried from his Mesa Grill Cookbook has been a winner. This Pepper Crusted Steak with Goat Cheese Recipe was so good that we enjoyed it the following week with company. Any recipe that’s worth making twice in 2 weeks is worth a try right? We also made the Roasted Red Pepper and Ancho Chile Salsa that was included but we were not big fans of the salsa. Some of the issue may have been a key ingredient I left out accidentally but we didn’t make the sauce for the second round. The goat cheese is a perfect accompaniment to the peppery flavor of the steak. This is one of those posts that my mouth just waters as a think about this meal. It was so fantastic!
To accompany this fantastic steak, we made bacon wrapped asparagus.
If you’ve ever celebrated a holiday at my parent’s house, you’ve enjoyed my mom’s bundles of green beans. I now make those green beans for holidays and I’m convinced that’s why we are invited back to celebrate with friends. Green beans, wrapped in bacon and covered in butter and brown sugar, what’s not to love? For this dinner we used asparagus instead and the end result was amazing. Most of the bundles of asparagus didn’t make it to the table because we were eating them right out of the pan. They were delicious!
To make these bundles of asparagus, simply take 4-6 stalks of asparagus and wrap in a half slice of bacon. Make sure to out the bundles seam side down so that they stay bundled. Place the bundles in a 9×13 or for crispier results place on a wire rack on a baking dish. Melt a 1/4 cup of butter and then add 1/4 cup brown sugar to the butter. Add a 1/4 tsp of garlic salt to the butter mixture then spoon the mixture over the bundles. Cook at 350 until the bacon crisps, about 30 minutes.
We completed the meal with grapefruit margaritas. This recipe for Grapefruit Margaritas was another Pinterest find. While we enjoyed these, I needed more grapefruit flavor and ended up doubling the amount of grapefruit juice in my drink. Depending on how much you like grapefruit, you may need to tweak the recipe to fit your liking.
It was a wonderful night of celebrating, looking back at how far we’ve come on our journey together and spending time dreaming about where we are headed. What’s your favorite way to celebrate special occasions with the one you love?
