Since I’ve already confessed my love of Dr. Pepper, I’ll make another confession. I hate leftovers. HATE them. For as long as I can remember, I’ve despised them. One of the biggest skills that I learned in the kitchen from my Dad is creativity with leftovers. We would joke that he could sculpt remnants of several dinners into something beautiful and appetizing. (Mind you, I never ate these creations. I just marveled at them.) Now that I foot the grocery bill, I try to eliminate leftovers by making smaller portions or make Currey eat all our leftovers. Occasionally, I channel my dad’s creativity and make something beautiful out of leftovers.
This dish of Stuffed Avocados is inspired by the fried avocados at Jorge’s. We went there on a trip to Amarillo with my best friend Kaki and her husband Canyon. Kaki recommended this entree and I’ve made a trip to Jorge’s every time we’ve returned to Amarillo since. For you Amarillo readers, please go enjoy some Jorge’s for me!
The great thing about this recipe is the foundation is leftovers. You could have grilled chicken, taco meat or Spicy Dr. Pepper Shredded Pork on hand for this recipe. Essentially, any type of meat would work.
So…are you ready for the easiest recipe ever?
Simply start with an avocado for each person having dinner. Slice the avocado in half, take out the pit and scope out the flesh onto a plate.
Pile on the meat of your choice. (If using leftovers, make sure you’ve heated your meat before this step.)
Then cover in jarred queso.
Oh the delciousness! This is a great dinner to serve for company. It’s easy, delicious and you won’t spend the entire evening slaving away in the kitchen.
