There are so many reasons why I love technology (and probably just as many reasons why it drives me crazy!) but one of my favorite inventions is Google. It is not uncommon for me to look in the pantry at a couple of ingredients then do a Google search for a recipe to make with them. Instantly there are 100’s of recipes at my fingertips that I can look through for inspiration or simply to pick a recipe to try. It’s glorious I tell you!
Several weeks ago I wanted to make cookies for youth group. It had been a couple of weeks since I’d made a snack and I was craving cookies. More specifically, I was craving oatmeal chocolate chip cookies. A quick Google search lead me to Cookies and Cups and Frosted Oatmeal Chocolate Chunk Cookies.
I’ve made several recipes from Shelly’s site so I knew Frosted Oatmeal Chocolate Chunk Cookies would be winners. The cookies alone were soft and chewy but topping them with butter cream icing added the perfect amount of sweetness. I couldn’t stop eating them! It was as though my brain couldn’t compute how such a simple iced cookie was so profoundly delicious.

Our youth group devoured a double batch and a couple of students were still raving about the cookies when their parents came to pick them up. Any time our students get so excited about a recipe, I know it’s worthy to be shared. Y’all will be thankful you added this recipe to your holiday baking list!
ingredients
1 cup butter, room temperature
1 1/2 cups brown sugar
2 eggs
2 tsp vanilla
2 cups flour
1 tsp salt
1 tsp baking soda
3 cups quick oats
2 cups chocolate chunks
1 cup butter, room temperature
1/2 cup brown sugar (light or dark...I used light)
1 tsp cinnamon
1 lb powdered sugar (4-5 cups)
1/2 tsp vanilla
3-4 Tbsp milk or cream
instructions
- Preheat oven to 350.
- In the bowl of a stand mixer or a large mixing bowl with a hand mixer, cream butter and brown sugar together until combined (about 2-3 minutes). Add eggs one at a time then add in the vanilla. Beat for an additional 2-3 minutes, until the batter is fluffy and light in color.
- With the mixer set on low, add in flour, salt and baking soda. Mix until ingredients are incorporated. Add in the oats and mix again.
- Fold in chocolate chunks.
- Form 1 1/2 tablespoon balls of dough and place on a parchment lined baking sheet about 2 inches apart. Bake cookies 8-9 minutes.
- Cookies can cool on baking sheets for 2-3 minutes then move to a wire rack to cool completely.
- While the cookies cool, make the frosting.
- In bowl of stand mixer beat butter and brown sugar together for 2 minutes. Add powdered sugar and cinnamon then mix on low to combine.
- Add vanilla and milk then beat for another 2 minutes until light and fluffy. Add additional milk 1 Tbsp at a time until frosting is desired consistency.
- Frost each cookie with 1 generous Tbsp of frosting.
