On Sunday night we kicked off youth group. We like our first event to be a monumental bash so this year we decided to start the year with an art gallery. Our youth group is full of incredibly talented artists so they brought their work for us to display. There were drawings, paintings and photographs hung around the room. We had students perform songs and spoken words as well as show a short film one student had created. Seriously, it was so fun! Everyone got all dressed up and walked a red carpet into the event. It was certainly a night to remember!
As always, I was responsible for the food. I love feeding our students because they always rave about the food I prepare. Their enthusiasm is always a boost of confidence to me. I decided that a dessert bar would be perfect for our event and began searching for the perfect bite size dessert recipes. When I stumbled upon these chocolate chip cookie dough bites I knew I had to give them a try. Who doesn’t love cookie dough? An egg less version dipped in melted chocolate sounded amazing and I was sure that our students would love them.
The original recipe is for large scoops of cookie dough so I simply used a round tablespoon to form the dough instead of an ice cream scoop. They were bite sized and so incredibly cute! Once they had chilled for an hour I dipped the bottom half of each dough ball into melted chocolate then chilled again. Everyone went crazy for these treats! I tripled the recipe and I was so glad that I did. This is a really fun recipe because you can easily customize it to your taste. Substitute peanut butter for the yogurt to make peanut butter bites or swap out white chocolate chips for the chocolate chips. You could even add chopped nuts or toffee bits. There are endless possibilities and flavor combinations.
While all the desserts were enjoyed, the kids went on and on and on about how amazing these were. It looks like there is a new youth group favorite!
ingredients
1 stick butter, melted
1 cup plus 2 Tablespoons all purpose flour
½ teaspoon baking soda
pinch of salt
½ cup brown sugar
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/3 cup Greek yogurt
¾ cup semi-sweet chocolate chips
1 package (12 oz.) Wilton Chocolate Melts

- In a large mixing bowl, cream the sugars and butter together. Add the yogurt and vanilla then beat until combined.
- In a small bowl mix the flour, salt, and baking soda. Add this to the sugar mixture. Mix until well combined then fold in the chocolate chips with a mixing spoon.
- Scoop tablespoon size spoonfuls of cookie dough onto parchment paper. Shape dough into balls then spear each cookie dough ball with a toothpick or mini fork. Allow the dough to set in the freezer for at least 1 hour.
- After an hour, melt Wilton Chocolate Melts according to the directions on the package. Dip the cookie dough bites in the coating, then return them to the parchment paper to set again. (I just dipped the bottom half of mine but you could completely coat them as well).
- Serve chilled from the fridge.
