Although my kids are still too young to attend school, I feel as though every trip to Target is a reminder that summer is quickly coming to a close. I find myself wanting to savor our laid-back summer days and soak up all the warm summer evenings enjoying meals filled with farm fresh produce. I’ve been buying berries in bulk as if consuming all the fresh fruit that I can now will sustain me through the winter when I get by with just apples. All this fruit is making me get more creative in the kitchen.
A few weeks ago, we were having a few of our youth group students over for dinner. I had spent tons of time perfecting the dinner menu but realized that I’d given no thought to dessert. There is an expectation whenever our students come over that there will be dessert. And not just some slice and bake cookies but a delicious and decadent dessert. I looked in the fridge and realized I had a Costco sized crate of strawberries I needed to use up. I also had a couple of frozen pound cakes in the freezer. A quick search of my Pinterest boards produced a recipe for grilled pound cake. I had to give this a try!
The highlight of my night is when one of girls sheepishly asked for seconds. That broke the ice for them to all clamor for additional slices of grilled pound cake. My day was made. The highest compliment for any meal that I serve is asking for more. Just another reason why I love feeding our students! Great food, meaningful conversations and time spent around our table always makes for a lovely night.
Seriously, this recipe is so incredibly easy and would be great for feeding a big crowd. It’s a great way to use up fruit that’s about to spoil and is a perfect treat on any summer night! We served ours with scoops of vanilla ice cream and strawberries but you could use any berries that you have on hand. This is the perfect dessert to enjoy as you and your family savor the last of your summer nights.
Grilled Pound Cake
Ingredients
2 pound cakes, store bought or homemade
2 cups berries, chopped
2-3 Tbsp sugar
2 Tbsp butter, melted
Ice cream
Directions
Toss berries with sugar and refrigerate for at least 1 hour.
Slice pound cake into 1 inch thick pieces. Brush each side with butter then place on grill. Cook for 1-2 minutes on each side. Top with a scoop of vanilla ice cream and berries.
