As I’ve mentioned previously, we struggle with coming up with creative options for lunch every day. I have become slightly obsessed with finding recipes on pinterest (you can follow my boards by clicking the link at the top of the page). This Mango Avocado Salad with Lemon Vinaigrette was a great find that we enjoyed twice in one week. Have you noticed a theme yet? When I find a great recipe, we typically have it twice in a week. Mostly this is due to the fact that I had to buy a large quanitiy of ingredients so it just makes sense to make the meal again.
I’d never used arugala in a salad before. Actually, I’m not even sure if I’d ever had arugala at all. I’ve watched several cookign shows where they talk about the peppery taste of arugala but I was quite surprised by how spicy it really was. We didn’t use the macadamia nuts simply becasue it would have doubled the price of the salad. The creaminess of the avocado coupled with the sweetness of the mango was in perfect balance with the vinegarette. The vinegarette made more than we needed for our salads so you could possibly cut down on the amount that you make.
The colors of the salad are beautiful and the salad was very fresh and summery. I served ours with pita chips and they were the perfect compliment to the salad. This would be another great addition to a bridal shower menu or lunch for friends. Head on over here to get these great recipes!
